Lemon Meringue Cookies

Last night was our neighborhood cookie swap and crazy sweater contest.  We had such a wonderful time.  I always try to make something that will be a little different, so last night I made meringues – lemon meringues because bunches of my friends love lemon as much as I do.  The recipe is here and it is super easy and looks very impressive … melt-in-your-mouth delicious, too.

Lemon Meringue Cookies

6 large egg whites – room temp

2 teaspoons fresh lemon juice

1/8 teaspoon salt

1 teaspoon pure vanilla extract

1 teaspoon pure lemon extract

1 1/4 cup sugar

  • Preheat oven to 200ºF.  Line 2 baking pans with parchment paper.
  • Beat egg whites, lemon juice, and salt in a large bowl on low until foamy. 
  • Add extracts.
  • Increase mixer speed to medium and add the sugar in a slow continuous stream.
  • Increase speed to medium high and continue beating until egg whites form satiny, stiff peaks.
  • Fit a large piping bag with a star tip and pipe some little puffs on the parchment.
  • Bake for 1 hour.  Do not open the oven door.
  • Reduce heat to 175ºF and bake for 2 more hours.
  • Move the parchment and cookies on a rack to cool for about 45 minutes.

Makes about 40

    Lemon anything is good! My guilty pleasure are those little slices of lemon bread. Just seeing these pictures are making me crave something with lemon in it. I’m going to have to take a look at this website that has local Indianapolis Birthday Cakes and see if there is a lemon cake. If there is, I might just have to buy it!

    How was the crazy sweater contest?? I’m actually hosting an ugly sweater party tomorrow, but the friends seem unwilling to dress up!

      The party was super fun! The top three were pretty good. Second runner up had matching earrings. First runner up had a sugar cookie recipe embroidered ONTO the sweather with little sticks of butter and a sack of flour. The WINNER had a Santa coming down the chimney with his naked fanny sticking out of the fireplace and said, “Santa delivers BREECH”. As if that wasn’t enough, she had another cardigan style sweater over that!

      We had a pretty good turnout, but apparantly the real “ugly sweater” participants are the college students. My Nanny, Lindsay, hosted a sweater party and those pics were out of control – many, many grandmothers are looking for their things still, I believe!

      I hope your party is a success. We decided that next year, instead of the sweather thing, we are having a PAJAMA PARTY!!! I bet there is 100% participation!
